Credit card processing traps to beware

Dear FSB: I am in the process of opening a diner/ice cream parlor in town and am struggling with which credit card processing company to go with. There are many, and I have heard horror stories. I have additionally looked up several with the Better Business Bureau. Do you have any advice or recommendations for a first-time business owner?
